
One of our favorites growing up were Kotlety. We used to call them Russian hamburgers. A recipe for a more Russian version of these is in our cookbook but I wanted to share this recipe that has a Persian twist.

I think that most cultures must have a form of these – we call them frikadeller. Sometimes they’re big and sometimes they’re more golf-ball sized. I server them with boiled potatoes, peas and onion gravy.
Love those Russian hamburgers of my childhood! They were always served with potatoes and gravy and vegetables…and never in a bun!
